Fresh Tomato Salsa
It’s summer and the grocery stores are full of fresh tomatoes. What could be better for a healthy snack than a huge spicy bowl of homemade Salsa? And surprise, it’s easy to make.
Tomatoes are considered to be a fruit and not a vegetable. They also have a higher concentration of Lycopene than other fruits or veggies. Lycopene is a vital anti-oxidant that helps in the fight against cancerous cell formation, as well as, other kinds of health complications and diseases. As much as our systems may require Lycopene, it is not a naturally produced element within the body.
The health benefits of fresh Salsa can be compromised should you devour a big salty bag of Tostidos along with it. You have to add the moderation. Now for the easy part…
Fresh Tomato Salsa (10 Cups):
- 6 lbs. fresh tomatoes (I know that sounds like a lot, but don’t worry, this salsa freezes)
- 1 large onion
- 3-5 cloves of fresh garlic
- 1 bunch of fresh cilantro
- 4 jalapeno peppers
- 2-3 habanero peppers
- juice of one lime
- salt and pepper to taste
Put everything in your food processor and hit the button. That’s all there is to it. Recipe makes approximately 10 cups.
Now grab a bag of chips and enjoy!

@Susie – I’ve got some friends that are Hydroponic gardeners and they gave me peppers a month ago. That night, I watched Heather throw stuff in her food processor and call it “Salsa”. So, I came home, tweaked the recipe and wrote down the portions. I’ve made it several times now and it’s become a family favorite.
I’m not a tomato person, but I may have to try this when my tomatoes ripen!
